Ingredients. coconut flour*

Coconuts are the fruit of the coconut palm, which can grow up to thirty metres tall. The origins of the plant are not fully understood, but it is likely to have originated in Southeast Asia, from where the germinating coconuts swam by sea to more remote areas with tropical climates, and human hands have been instrumental in its spread.

Coconut flour is a by-product of coconut milk production, essentially dried coconut meat that is finely ground.

Importance, effects:

Compared to other flours, coconut flour is low in carbohydrates and high in protein, fat and fibre, and is recommended for diabetics and those following a low-carb diet. In addition, coconut flour does not contain gluten, so it can be eaten by people with gluten sensitivity.

It has a high magnesium content, but also contains iron and selenium, among other minerals.

Uses:

Coconut flour has a wide range of uses, such as in cakes, biscuits and breads, but those who have not used it before should be careful, as coconut flour can cause surprises.

Coconut flour has a very good water retention capacity, which means that a very small amount of coconut flour will retain much more liquid than usual. This should be taken into account when measuring out liquids, and the finished product will be slightly drier for the same reason. This effect can be avoided by mixing the coconut flour with some kind of seed flour.

To avoid clumping, it is advisable to sift the coconut flour thoroughly before use.
