Wheatgrass is the green leaves of the young wheat plant. Although there are many varieties of wheat, the most common is Triticum aestivum.
During the first few weeks of growth, these leaves look like grass in the garden. The wheat leaves are cut off and then made into juice or dried and prepared in powdered form. When eaten, it has an earthy taste.
The bright green colour of wheatgrass comes from chlorophyll. Chlorophyll can increase oxygen levels in the body. The natural compound is also found in other foods such as spinach and arugula.
Wheatgrass also contains enzymes, amino acids, vitamins and minerals, as well as flavonoids, alkaloids and tannins.
