Laurel is one of the oldest known and most widely used herbs. It is planted in all Mediterranean climates of the world. The leaves grown in Turkey and California are the most sought after. Preferably use the leaves, which are typically aromatic, stalkless and greenish in colour. It can be used to flavour soups, potato, egg, bean, fish dishes, tomato dishes, stews, sauces, gravies, sausage dishes, roasts, asps and jellies, cucumber, pumpkin, green tomato and cabbage dishes, marinating fish, braising pork and beef, pickling dishes, game marinades and game dishes. As the leaf is highly aromatic, its bitter taste can spoil food if overdosed.
