Erythritol or erythritol is a naturally occurring sugar alcohol. It has a sweetening power of 60-70% of that of cane sugar and has a similar appearance, but is not caramelizable. About 90% of it is absorbed in the small intestine, but it does not provide energy and is not used in the body, but is excreted through the kidneys. It does not cause bloating in a healthy intestinal tract. It has no side effects.

Benefits:

It contains negligible calories, does not raise blood sugar levels, does not affect insulin production, and can be consumed by diabetics, insulin resistant people and people who want to lose weight. It does not cause tooth decay. Another advantage is that it is excellent for foods where the volume of sugar is important, not just the sweetness (e.g. sponge cakes).

Disadvantages:

Unpleasant abdominal discomfort such as bloating and excessive gas formation may occur rarely, but may occur. If liquids are sweetened with it or if too much is used, this effect may be exacerbated. It loses its sweetness above 160°C.

Uses:

Not the best choice for baking as it degrades and loses its sweetness at 160°C. Sweeten liquids with care. A larger amount is needed to achieve the desired sweetness (about one and a half times the desired amount).
