In developing tahini, we experimented with sesame seeds from countless countries, and when an Arabian hummus fanatic partner called us and sent us samples to taste, saying that this was the best sesame paste he had tasted, we were a little reassured that we were on the right track.
Although not well known, Nigerian is one of the world's most special quality sesame seeds, unlike India and other more "known" origins, the tiny seeds have a more characterful, intense flavour, and thanks to its special preparation, we managed to make an intensely flavoured, runny cream with a very smooth consistency.
It is an excellent base for hummus, but can also be used to make fruit slices and other delicacies.
