Aztec sage seed (Salvia Hispanica). Chia is a member of the lip plant family, originally cultivated by the Aztecs in Mexico. As a newly discovered food, chia seeds offer the potential to make our diets healthier through regular consumption, as they contain a very high percentage of Omega 3 fatty acids, antioxidants, dietary fibre, minerals and vitamins. Chia seeds also contain high levels of calcium, as well as phosphorus, potassium, sodium, zinc, copper and manganese. Chia seeds have virtually no calories, are high in fibre, fill you up quickly and make you feel full because they absorb water, form a thick gel, fill your stomach and slow down the absorption of sugars, making them ideal for dieters. The easiest way to eat chia seeds is raw. The seeds can be added to breakfast cereals or muesli, or eaten on their own, mixed into juice, milk or even yoghurt or kefir. As they have no distinctive flavour (chewy seeds have a slightly nutty aroma), they can be added to almost anything. You can sprinkle the seeds on your salad or put them on sandwiches. In desserts, you can use chia seeds in a variety of puddings and smoothies. Chia seeds are easy to make into puddings, as they absorb well and have a nice jelly-like consistency. Ground chia seeds can also be added to a variety of pasta-based dishes as they are gluten-free and can easily be used as a substitute for flour, and many people use liquid-gelatinised chia seeds as a substitute for eggs. If you don't want to use chia seeds with a meal, the easiest way is to follow the Mexican example and make your own chia fresca, which is nothing more than a teaspoon of juice sprinkled with the seeds and left to soften for about 10 minutes. Do not eat more than 15g of chia seeds a day!
