WHAT IS RAW LIME HONEY?

Delicate Raw Lime Honey, with its fragrance and delicate aroma of linden blossoms, is a highly appreciated type of honey. Its yellow, amber colour and woody aroma give it a very delicate and distinctive flavour. It is a monofloral honey with a low acidity, medium sweetness and a medium rate of crystallisation (saccharification).
Monofloral hives are known to be produced in an area where the plants from which the bees collect the precious nectar are abundant. In the case of the linden, which flowers in early summer, its flowers are so fragrant and full of nectar that they attract bees easily. For this reason, linden trees are sometimes called 'bee trees'.
The bees collect the nectar and pollen from the linden flowers and bring it to the hive, where it is processed and turned into honey using enzymes in their saliva. The honey is stored in the honeycombs and remains uncovered for some time, allowing the water in its contents to evaporate, preventing fermentation. Finally, the cells are tightly sealed with wax caps.
